When the weather turns hot--Make THESE!!!

I make these recipes for frozen fruit cups every summer.  I like to keep them in the freezer in individual cups, so that they can be eaten as a refreshing treat anytime. We love both recipes; the second one is easier to keep the supplies on hand for since it doesn't require fresh fruit.




Banana/Strawberry Frozen Fruit Cups
6 bananas, mashed
6 oz. frozen orange juice concentrate
10 oz. frozen sliced strawberries, thawed (I usually double)
2 cans mandarin oranges, drained
1 lg. can fruit cocktail, undrained
1 lg. can crushed pineapple
28 oz. 7-Up

Combine all the ingredients in a large bowl. Freeze in individual plastic cups or 6 large Cool Whip containers. Thaw 30 minutes before serving (my kids microwave them).

Berry Frozen Fruit Cups
2 lg. containers frozen sliced strawberries, thawed
1 lg. can sliced/diced peaches, drained
1 lg. can crushed pineapple
1 bag frozen blueberries

Boil 1 c. water with 1 c. sugar in microwave until sugar dissolves.
Pour over the fruit mixture, stir and freeze.
I double this recipe and use 1 bag blueberries and 1 bag raspberries.

*freeze in short, clear plastic punch cups--line them up in a cake pan to fill
